Good morning guys!
It’s Saturday which means one thing: it’s a good day for sure!
I started my day off with a mug of delicious Dunkin Donuts strawberry shortcake coffee with vanilla soy creamer.
While sipping my coffee, I made a summery breakfast. What can I say, I’m really craving some warmer weather—so I thought a summery breakfast may bring some of that to me! A little wishful thinking never hurt anyone, right?
Strawberry Banana Parfait
The lovely top layer is simply:
- frozen banana
- frozen strawberries
- 1 scoop Sun Warrior protein powder
- almond milk
All blended up into a perfectly creamy consistency.
- chia seed gel (chias soaked overnight in water)
- fresh blueberries
Topped off with some cacao nibs.
The smoothie froze the chia seeds giving the whole parfait a great texture—yum! Of course, it’s vegan as well. The challenge is going strong—in fact I’m thinking of sticking with it longer (more on that later).
It’s fitting for Valentine’s Day, no?
Well, I’m off to take Adam to a birthday party! They’re seeing Gnomeo & Juliet at the movie theater—it looks adorable!
After dropping him off, my sister and I are heading the mall/Costco to do some damage browsing.
