Roasted Strawberry, Chickpea, and Goat Cheese Salad

Hey there friends! I hope everyone had a wonderful and relaxing weekend!

My weekend was super low key, so I decided to skip the weekend through a lens this week. Nothing to see over here besides catching up on shows and lounging around. Smile

So, let’s rewind back to Saturday afternoon and getting our sweat on. I had originally planned on going for a hike, but then my sister and I decided to head outside for a 4 mile run instead.

That 4 mile run ended being more of a long walk with sprints interspersed throughout. It was nearly 100 degrees and being the smart girls that we are, we headed out at 1 PM. The hottest point of the day. Yeah, we definitely didn’t think that one through.

We certainly got our sweat on though – so much so that we felt like we were going to melt/burst into flames at any given moment. Good times, good times.

Refueling came in the form of cold, crisp veggies. Coupled with warm, roasted toppings of course.

Yes, it’s strawberries!

Don’t ask why I decided to roast strawberries along with chickpeas. I just love to roast anything and everything I can get my hands on (of the vegetable and apparently now fruit variety, too).

Luckily for my taste buds, this turned out to be a good idea.

Roasted Strawberry, Goat Cheese, & Chickpea Salad

Ingredients

  • baby spinach
  • 1 can chickpeas (drained and rinsed)
  • 10 strawberries (washed and sliced)
  • cooked quinoa
  • goat cheese
  • sunflower seeds
  • Dressing  balsamic vinegar + extra virgin olive oil + a little stevia

Roasted the strawberries and chickpeas at 375 degrees for about 5 minutes, remove the strawberries and then cook the chickpeas for an additional 10 minutes. Next time, I’ll just add the strawberries during the last 5 minutes of roasting.

Top the spinach with the warm strawberries to allow it to wilt a bit.

Follow that up with everything else! Drizzle the balsamic vinaigrette over everything and enjoy!

The best bites are those that combine a little bit of everything  – chickpeas, sunflower seeds, goat cheese, spinach, and strawberries – all drenched in balsamic. Yum.
