Healthy Breakfast Pizza

It’s been way too long since I’ve made a healthy breakfast pizza. It’s another simple, healthy, and delicious recipe.

It’s also a good way to sneak in some veggies when your meals have been lacking a bit in that department. Ahem, like mine has been the past few days.

What you’ll need:

  • Flat Out wrap (or whole grain tortilla of choice)
  • Eggs (1 egg + 2 egg whites for me)
  • A ‘sauce’ (I used salsa + nutritional yeast)
  • Veggies (red pepper + spinach)
  • Cheese if desired (feta makes it beta)

Other possible toppings:

  • Hot sauce (like Sriracha)
  • Veggie sausage (or real if that’s your thang)
  • hummus or laughing cow for the ‘sauce’

Begin by chopping and sautéing your veggies.

I sauté in extra virgin olive oil for the healthy fats.

Scramble your eggs. (in EVOO again)

Now you can begin to assemble your pizza.

After you’ve spread the sauce, put the pizza in the broiler for a minute or two. This gets the crust nice and crispy.

Then top with your sautéed veggies.

Finally, top the pizza with the scrambled eggs and cheese. Pop it in the broiler again to get your cheese nice and melty.

See that little blur in the bottom right-hand corner? That would be little Mr. Georgie. He recently discovered his ability to jump. So, if you’re like me you may have to battle your kitty while trying to enjoy your breakfast.

Good thing he’s such a cutie because when it comes to food, I don’t like to share. Winking smile
