Goat Cheese Quesadilla

I skipped dinner last night. Instead, I simply snacked my way through the kitchen.

You see, I haven’t been grocery shopping in two whole weeks. That means that my refrigerator is devoid of anything fresh. Of course I have hummus, almond butter, almond milk, cereal, and crackers. All of which were included in my snack-a-thon.

Even though I chose snacking over dinner, I still have a growing boy to feed. Although I’m kind of wishing I didn’t feed him because he woke up at 2:30AM throwing up. Ah, poor baby. Stomach bug or food-related? We’ll never know.

Any who, now that I’ve intertwined throwing up into my dinner story (yum)—let’s see what snack made the blog cut.

Following a mostly vegan diet is great, but I simply cannot give up goat cheese for good. Not yet anyway. Never say never. <—I’ve resorted to stealing Justin Bieber’s words.

I guess I lied about the fresh vegetables—there is spinach in that wrap. Spinach doesn’t count because I always have spinach.

Ooey Gooey Goat Cheese Quesadilla

  • Trader Joe’s goat cheese medallion
  • strawberry preserves
  • spinach
  • 2 La Tortilla Factory whole wheat wraps

Fill it up and grill it up. <—I used my George Foreman.

So easy, so good. Now that I’ve got my goat cheese fix, I’m good for a few days while.

Adam had a chickpea patty + sweet potato fries. I’ll never look at either the same again. Plus, I’m totally pitching the chickpea patties—I don’t think I could touch them with a ten-foot pole.

More throw up talk followed by more food. Forgive me, I’m sleep-deprived.

Katie’s pizzert has been on my list of things to make for a while now and today was the day!

It fell apart when I removed it from the pan—yet that didn’t take away from it’s deliciousness. I felt like I was eating cake for breakfast. I mean you can’t deny that cake for breakfast wasn’t a childhood dream (or reality).

I halved all of Katie’s measurements since her recipe makes 2 servings. My pizzert contained the usual suspects plus pumpkin, pecans, pineapple, and coconut oil.

Topped off with almond butter + unsweetened coconut. Can I have another?

Well, Adam is sleeping peacefully away on his clean sheets. I think I’m going to do the same.
