I absolutely love not having to set an alarm for Saturday mornings.
That will change once Adam starts having soccer games on Saturday mornings but for now I’m thankful for sleeping in!
I’m also thankful for protein coffee oats and iced coffee. double whammy for caffeine with this breakfast
Blueberry Coffee Protein Oats
- 1/3 C. old-fashioned oats
- 2/3 C. blueberry coffee
- with 1 organic egg whisked in
- + 1/4 C. frozen blueberries added during the last minute of cooking
Once the oats were all cooked up, I added a little stevia and topped them with more frozen blueberries and cinnamon!
I totally forgot to add almond butter (which makes the oats)—so I added that right before digging in!
Served with a side of blueberry iced coffee for a perfect late breakfast (and a bit of a blueberry bonanza):
Adam and Sam both had egg & cheese sandwiches on whole wheat bread + sliced bananas. Happy bellies all around.
Last night we took Adam to see Yogi Bear for his weekly choice night. if you’re new, this was one of my 2011 goals.
It was a really cute movie that gave me a flashback to my childhood cartoon-watching days. I brought a baggie of unsalted pistachios to snack on, but I ended up eating about half a bag of Reese’s Pieces anyway! another childhood favorite!
“Hey boo-boo! Let’s go get us some picanic baskets!”
We also stopped at Costco to replenish our hummus and produce supplies.
My fridge is now stocked with hummus, spinach, oranges, cantaloupe, carrots, tomatoes, peppers, and cucumbers. Which pretty much means that all’s right with the world.
