Bigger and better.

Pretty much immediately after I ate my single-serve coconut oatmeal cookie this morning, I got to work again and made a bigger and better variation.

Chocolate Chip Pina Colada Oat Bars

Adding chocolate chips always ups the game.

  • 1 C. old-fashioned oats
  • 1/2 T. cinnamon
  • 1 T. coconut oil
  • 3 T. unsweetened shredded coconut
  • 1 T. honey
  • 2 mini scoops stevia
  • 1 scoop vanilla protein powder (sun warrior for me)
  • 1 1/2 T. ground flax seed
  • 1/2 C. coconut milk
  • 1/4 C. chocolate chips
  • 1/4. C. frozen pineapple

Mix together all the ingredients except for the chocolate chips and pineapple.

Blend it up.

Fold in the pineapple and chocolate chips. Add to a bread pan (sprayed with nonstick spray) and bake at 350 degrees for 15 minutes.

Pre-bake:

Remove from the oven and allow to cool.

Cut into bar shapes and enjoy while they’re still warm! These don’t even need any toppings!

My Dad recommended that I add some slivered almonds for crunch, while my Mom said that they are perfect as-is. If you try them, let me know whose side you’re on!

Zumba was a blast today! A different instructor taught the class—so I had beginner status yet-again. My sister and I are still hiding out in the back row until we have a few more classes under our belts!

Well I’m off to spend the night studying at the library. Even though I have the day off tomorrow—I still have a lot to get done before Tuesday!
