And no it’s not pumpkin oats. (Gasp!)
In the bowl:
- 1/2 c. Oats
- 2 T. Chia seeds
- Cooked in water
- 1/2 Frozen banana (cooked in)
- Topped with Apple Butter
- The Star: Justin’s Chocolate Almond Butter
- Cacao Nibs for Crunch
SO good! Usually I would top it off with some sort of fresh fruit (nectarine, banana…) but I’m all out!
No spinach, no bananas, and no fresh fruit? Costco here I come!
So last night I had a surprise dinner. The man brought home Chipotle! Chipotle twice in the past week? Yes, please!
He added cheese, which I never add, but that’s okay. I’ll roll with it. I couldn’t really complain when he brought me dinner, could I?

It involves this pretty envelope and an unintentional fib. Doesn’t ‘fib’ sound so much better than ‘lie’?
My day looks a little something like this:
- Vacuum + Laundry
- Run (hopefully 3-4 miles)
- Walk the pup
- Costco + Post office
- Reflection Paper + Club Flyer
- Pick up Adam + Drop off at Foreign Language
There’s more, but I don’t want to give myself an anxiety attack this early in the day.
What’s your best/favorite oat combo? To date, today’s combo is my favorite. But I’m certain I’ll make a liar out of myself when I find something even better!
