I’m not a big Valentine’s Day girl. Don’t get me wrong – I love to be appreciated, cherished, and pampered. Who doesn’t? But in a relationship, that should be more of an every day thing.
At the same time, I kind of feel like that’s what people say who aren’t celebrating. And if Sam planned something extravagant, then I’d be all I love Valentine’s Day! But then again, I get excited when Sam plans something regardless of the day. Clearly, I like to talk in circles.
Just my two cents.
With that said, I did make a special Valentine for a company that is near and dear to my heart.

I have but one word for this company: amazing. Okay two words: absolutely amazing.
Okay, so let’s completely change directions and talk about PIZZA! We can just say that my love for pizza is the Valentine’s Day theme. Sound good?
If there is one thing that I can never give up—it’s pizza. Okay, so there are several other things on that list (frozen yogurt, chocolate, coffee…etc.) but for today, let’s stick with one.
When I first started losing weight, I considered pizza to be off-limits. Thick white crust and heavy cheese just don’t jive with health and weight loss.
But although pizza gets a bad rep health-wise, there are actually plenty of ways to healthify your pizza.
For me, it all starts with making a healthier crust. Flat out crust, thin crust, chickpea flour crust, whole wheat crust, flax seed crust, and now – CAULIFLOWER crust!
I’ve seen several variations of cauliflower crust on the internet, but of course I made my own version (based on what I had on hand).
Cauliflower Pizza Crust
- 1.5 C. grated cauliflower
- 1/2 C. egg whites
- 1/4 C. pepper jack cheese
- 1 T. nutritional yeast
- 1 T. flax meal (or ground flax)
- 1/2 T. Italian seasoning
- 1 t. freshly ground sea salt
- Grate the raw cauliflower into a microwave safe bowl. Then warm the cauliflower for 1-2 minutes.
- Add in the rest of the ingredients and mix well.
- Spread the mixture out onto a greased cookie sheet or place in a round baking dish. I went with a baking dish.
- Bake on 350 degrees until the crust is nice and crispy (about 30 minutes). Flip if you dare – but be warned, it may fall apart.
- Once my crust was crispy, I flipped the dish over onto a baking sheet, topped it with red sauce and veggies, and baked for an extra 5 minutes.
Step 1-3. Ready to go in the oven.

Ready to eat!
I topped mine with spicy red sauce, spinach, and mini sweet peppers. Absolutely delicious and healthy too.
See? Pizza should never be banned from a balanced diet.
